Ingredients for making Chocolate Bride Mattress Cake:

For the chocolate cake:

 6 eggs

 2 cups of wheat flour (280 grams)

 2 cups of sugar (320 grams)

 1 cup cocoa or chocolate powder

 1 cup of milk (240 milliliters)

 1 tablespoon of baking powder

For condensed milk filling:

 1 can of condensed milk

 ½ can of milk

 1 tablespoon of cornstarch (cornstarch)

 1 tablespoon of butter

How to Make Chocolate Bride Mattress Cake:

Separate the whites from the yolks and beat the whites with an electric mixer until firm, as in the photo. Reserve.

Tip: To make the whites faster, add a pinch of salt or a few drops of lemon juice to them.

In a bowl beat the remaining ingredients: egg yolks, sugar and milk. Add the flour and the sifted cocoa or chocolate powder and mix well.

Then place the egg whites and add them little by little, in smooth movements, preferably with a spatula. Add yeast last and mix lightly.

Place the cake batter in a rectangular shape measuring approximately 30 x 40 cm, lined with parchment paper (as in the photo) or greased and floured. Bake in a preheated oven at 180ÂșC for 30 minutes or until you pass the toothpick test.

Meanwhile, prepare the condensed milk filling simply by dissolving the starch in the milk and placing it on the fire along with the condensed milk and butter. Keep stirring the cream until the point of soft brigadeiro and turn off the heat.

Tip: If the filling is too thick, add a little more milk.

After baking the cake, remove it from the oven and let it cool. Then cut in half and fill with half the cream. Cover with the other half of the cake and spread the remaining cream in the icing. Decorate with grated coconut or any other ingredient of your choice and your rectangular wedding cake is ready!
